Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin fries and soak them in cold water for at least 30 minutes to remove excess starch.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Garlic and Rosemary
Mince the garlic cloves and chop the fresh rosemary.

Season the Fries
Drain the soaked fries and pat them dry. In a large bowl, toss the fries with olive oil, minced garlic, chopped rosemary, salt, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Once done, remove the fries from the oven, let them cool for a few minutes, and serve warm as a delicious side dish.
