Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin slices or sticks, about 1/4 inch thick.

Dry the Potatoes
Drain the water and use a clean kitchen towel or paper towels to dry the potato slices thoroughly.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add a batch of the dried potato slices to the hot oil, being cautious not to overcrowd the pot. Fry them for about 4-5 minutes until they are golden and crispy.

Drain and Season
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While they are still hot, sprinkle with salt and pepper to taste.

Serve
Serve the fries immediately while hot and crispy.
