Preparation and Assembly

    Prepare the Falafel

    Soak the dried chickpeas in water overnight. Drain and rinse them. In a food processor, combine chickpeas, garlic, onion, parsley, cumin, coriander, salt, and baking powder. Blend until coarsely ground.

    Shape and Fry the Falafel

    Form the chickpea mixture into small balls or patties. Heat olive oil in a deep pan over medium heat. Fry the falafel in batches until golden brown, about 3-4 minutes on each side. Drain on paper towels.

    Grill the Vegetables

    Slice the mixed vegetables and toss them in olive oil, salt, and pepper. Grill on a barbecue or stovetop grill pan until tender and slightly charred.

    Warm the Pita

    Warm the pita bread in the oven or on a skillet until soft and pliable.

    Assemble the Plate

    On a large plate, spread a layer of hummus. Place the falafel, grilled vegetables, tabouli, and olives on the plate. Serve with warm pita bread on the side.
