Prepare the Dates
Preheat your oven to 400°F (200°C). Slice the Medjool dates lengthwise and remove the pits. Stuff each date with a small piece of Manchego cheese.

Wrap with Bacon
Cut each strip of bacon in half. Wrap each stuffed date with a half strip of bacon and secure it with a toothpick if necessary.

Bake the Dates
Place the wrapped dates on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and black pepper. Bake in the preheated oven for about 15-20 minutes, or until the bacon is crispy.

Prepare Balsamic Honey Drizzle
In a small saucepan, combine balsamic vinegar and honey. Heat over medium heat until slightly thickened, about 3-5 minutes.

Serve
Remove the dates from the oven and drizzle with the balsamic honey mixture. Serve warm.
