Pork Marinade

Prepare the Marinade
In a bowl, combine cumin, oregano, minced garlic, orange juice, lime juice, and olive oil. Mix well.

Marinate the Pork
Place the pork shoulder in a large resealable bag or dish. Pour the marinade over the pork, ensuring it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.

Shred the Pork
Once cooked, let the pork rest for 10-15 minutes before shredding it with two forks.
Sandwich Assembly

Assemble the Sandwich
Slice the Cuban bread lengthwise. Spread mustard aioli on both sides of the bread. Layer shredded mojo pork, sliced ham, salami, sliced Havarti cheese, and house pickles.

Press the Sandwich
Close the sandwich and press it in a panini press or grill pan until the bread is golden brown and the cheese is melted, about 3-5 minutes.
