    Wash and scrub the potatoes thoroughly to remove any dirt. Pat them dry with a towel. If using russet potatoes, cut them into thick wedges; if using sweet potatoes, cut them into similar-sized wedges.

    Preheat the Oven

    Preheat your oven to 425°F (220°C). This high temperature will help achieve a crispy texture.

Cooking

    Season the Fries

    In a large bowl, toss the potato wedges with olive oil and salt until evenly coated. If making Cajun fries, add the Cajun seasoning ingredients and mix well. For sweet potato fries, add the cinnamon, nutmeg, and brown sugar.

    Arrange on Baking Sheet

    Spread the seasoned potato wedges in a single layer on a baking sheet lined with parchment paper. Make sure they are not overcrowded, as this will prevent them from getting crispy.
