Preparation of Shrimp

    Prepare the Shrimp

    In a mixing bowl, combine the all-purpose flour, salt, and black pepper. In another bowl, beat the eggs until well mixed. In a third bowl, place the coconut flakes.

    Coat the Shrimp

    Dip each jumbo shrimp into the flour mixture, coating it evenly. Next, dip it into the beaten eggs, allowing excess to drip off. Finally, roll the shrimp in the coconut flakes until fully coated.

Cooking the Shrimp

    Fry the Shrimp

    Heat a large skillet over medium-high heat and add enough oil to cover the bottom of the skillet. Once hot, carefully add the coated shrimp. Fry for about 2-3 minutes on each side or until golden brown and crispy. Remove from the skillet and drain on paper towels.

Serving

    Serve with Sauce

    Arrange the fried coconut-crusted shrimp on a serving plate and drizzle with sweet Thai chili sauce or serve it on the side for dipping.
