Prepare the Raspberry Mint Coulis

    Make the Coulis

    In a small saucepan, combine raspberries, sugar, water, and mint leaves. Cook over medium heat, stirring occasionally until the raspberries break down and the mixture thickens, about 10 minutes. Remove from heat and strain through a fine-mesh sieve to remove the seeds. Set aside to cool.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Once done, remove from skillet and let drain on paper towels.

Assemble the Grilled Cheese

    Layer the Ingredients

    On one slice of sourdough bread, layer 2 slices of Muenster cheese, followed by crumbled goat cheese, and 2 slices of bacon. Top with another slice of sourdough bread. Repeat for the second sandwich.

Grill the Sandwiches

    Grill the Sandwiches

    Heat a skillet or griddle over medium heat. Butter the outside of each sandwich lightly. Place the sandwiches in the skillet and grill until the bread is golden brown and the cheese has melted, about 3-4 minutes per side.

Serve

    Plate and Serve

    Once grilled, remove the sandwiches from the skillet and sprinkle with powdered sugar. Serve with the raspberry mint coulis drizzled over the top and a choice of side.
