Prepare the Dressing
In a medium bowl, combine mayonnaise, fresh dill, chopped celery, lemon juice, salt, and black pepper. Mix well until all ingredients are combined. Set aside in the refrigerator to chill while preparing the seafood.

Poach the Seafood
In a large pot, bring the beer to a gentle simmer over medium heat. Add the crawfish tails and Gulf shrimp to the pot, then sprinkle in the Old Bay seasoning. Poach the seafood for about 3-5 minutes, or until cooked through and vibrant. Remove from heat and drain, allowing the seafood to cool slightly.

Assemble the Rolls
Once the seafood has cooled, gently fold it into the chilled dressing until evenly coated. Take the toasted hoagie rolls and layer with lettuce leaves. Spoon the seafood mixture generously into each roll.
