Seasonal Vegetables

Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets into the bowl and ensure they are well coated. Let them marinate for at least 30 minutes in the refrigerator.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F/190°C). Ensure the grill grates are clean and lightly oiled to prevent sticking.

  3. 3

    Grill the Salmon

Remove the salmon from the marinade and place it directly on the grill. Grill the salmon for about 6-8 minutes on each side or until it flakes easily with a fork and has nice grill marks.

Preparing the Seasonal Vegetables

  1. 4

    Prepare the Vegetables

Wash and chop the asparagus, bell peppers, and zucchini into bite-sized pieces. Place them in a bowl.

  2. 5

    Season the Vegetables

Drizzle the vegetables with olive oil, then sprinkle with salt and black pepper. Toss to combine.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once both the salmon and vegetables are grilled, remove them from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate. Enjoy your meal!
