Filet Mignon Preparation

Season the Filet
Rub the filet mignon with olive oil and season generously with Cajun seasoning on all sides.

Cook the Filet
In a hot skillet over medium-high heat, sear the seasoned filet mignon for about 4 minutes on each side or until it reaches your desired doneness.

Serve with Chimichurri
Remove the filet from heat and let it rest for a few minutes before serving with a generous spoonful of chimichurri sauce on top.

Cook the Garlic
In a small saucepan, melt 2 tablespoons of butter over medium heat and add minced garlic. Sauté until fragrant, about 2 minutes.

Mash the Potatoes
Drain the potatoes and mash them in a large bowl. Add the sautéed garlic, remaining butter, milk, salt, and pepper. Mix until creamy and smooth.

Roast the Vegetables
Spread the seasoned vegetables on a baking sheet and roast in a preheated oven at 400°F (200°C) for about 15-20 minutes until tender and slightly caramelized.
