Method

Preparation

  1. 1

    Clean the Calamari

Clean the calamari by removing the outer skin and innards. Cut the rings and tentacles into bite-sized pieces if needed. Rinse under cold water and pat dry with paper towels.

  2. 2

    Prepare Vegetables

Chop the cherry peppers into small pieces, removing seeds if desired. Mince the garlic and finely chop the shallots. Roughly chop the kale, removing the hard stems.

Cooking

  1. 3

    Sauté Garlic and Shallots

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, sautéing for about 2-3 minutes until fragrant and translucent.

  2. 4

    Add Cherry Peppers

Add the chopped cherry peppers to the skillet and sauté for another 2-3 minutes until they begin to soften.

  3. 5

    Cook Calamari

Increase the heat to medium-high and add the cleaned calamari. Stir-fry for about 2-3 minutes until the calamari is opaque and cooked through. Season with salt and black pepper.

  4. 6

    Add Kale

Add the chopped kale to the skillet and stir until wilted, about 2 minutes.

  5. 7

    Plate the Dish

Remove from heat and let cool for a minute before plating.

Serving

  1. 8

    Serve with Marinara

Serve the calamari mixture hot with a side of marinara sauce for dipping.
