Preparation

Prepare the Filet Mignon
Trim any excess fat from the filet mignon and season it with salt and black pepper on both sides.

Slice the Vegetables
Slice the bell peppers, shallots, and shiitake mushrooms. Set aside.

Prepare the Cheese
Slice the Havarti cheese into thin slices and set aside.

Cook the Filet Mignon
In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the filet mignon and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let it rest for a few minutes before slicing it thinly.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the sliced bell peppers, shallots, and shiitake mushrooms. Sauté for about 5-7 minutes until they are tender and slightly caramelized. Season with salt and pepper to taste.

Assemble the Cheesesteak
Slice the Amoroso rolls in half. Layer the sautéed vegetables and sliced filet mignon on the bottom half of the roll. Top with slices of Havarti cheese. Place the top half of the roll on top.

Melt the Cheese
Return the assembled cheesesteaks to the skillet over low heat, cover, and cook for an additional 2-3 minutes, or until the cheese is melted.

Serve
Remove the cheesesteaks from the skillet and serve immediately with your choice of side.
