Method

Turmeric Rice

    Cook the Rice

    In a medium saucepan, combine the long-grain rice, turmeric powder, water, and salt. Bring to a boil over high heat.

    Simmer

    Once boiling, reduce the heat to low, cover, and let it simmer for 18-20 minutes or until rice is tender and water is absorbed.

    Fluff and Set Aside

    Remove from heat, fluff the rice with a fork, and set aside.

Black Beans

    Prepare the Beans

    In a saucepan, heat the olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.

    Add Beans and Spices

    Add the canned black beans (drained and rinsed), cumin, and salt to the saucepan. Cook for 5-7 minutes until heated through.

Grilled Ham

    Prepare the Ham

    In a skillet, heat olive oil over medium-high heat. Add the thick-cut ham slices and season with black pepper.

    Grill the Ham

    Cook for about 3-4 minutes on each side until heated through and slightly caramelized.

Mojo Pork

    Marinate the Pork

    In a bowl, mix together the orange juice, lime juice, minced garlic, olive oil, oregano, and salt. Add the pork shoulder and marinate for at least 1 hour (preferably overnight).

    Cook the Pork

    Preheat your oven to 300°F (150°C). Place the marinated pork in a baking dish and cover with foil. Cook for about 3-4 hours until tender.

    Shred the Pork

    Once cooked, remove the pork from the oven, let it rest for 15 minutes, then shred it using two forks.

Pico de Gallo

    Chop Ingredients

    Dice the tomatoes, red onion, and jalapeño pepper. Finely chop the cilantro.

    Mix Together

    In a bowl, combine the chopped tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside.

Citrus Sour Cream Sauce

    Combine Ingredients

    In a small bowl, mix together the sour cream, lime juice, orange zest, and salt.

  2. 14

    Chill and Serve

    Refrigerate the sauce for at least 15 minutes before serving to allow flavors to meld.
