Cake Preparation

  1. 1

    Melt Chocolate and Butter

In a medium saucepan, combine the unsweetened chocolate and unsalted butter. Heat over low heat, stirring until the mixture is smooth and fully melted. Remove from heat and let cool slightly.

  2. 2

    Mix Wet Ingredients

In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until the mixture is pale and slightly thickened. Stir in the melted chocolate and butter mixture, followed by the vanilla extract.

  3. 3

    Combine Dry Ingredients

In a separate bowl, sift together the all-purpose flour and salt. Gradually fold the dry ingredients into the chocolate mixture until just combined. Do not overmix.

  4. 4

    Prepare Ramekins

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and dust with flour to prevent sticking. Tap out any excess flour.

  5. 5

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.

  6. 6

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft. Do not overbake.

  7. 7

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges of each cake to loosen, then invert onto individual plates. Dust with powdered sugar and serve with a scoop of vanilla ice cream.
