Grilling or Blackening
If using the blackened or grilled method, preheat your grill or cast-iron skillet over medium-high heat. Drizzle olive oil over the chicken breasts and season generously with blackening seasoning on both sides.

Cook the chicken for about 6-7 minutes per side, or until it reaches an internal temperature of 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

Dredge each chicken breast in flour, dip in eggs, and then coat in breadcrumbs. Heat oil in a skillet over medium-high heat and fry the chicken for about 5-6 minutes on each side, or until golden brown and cooked through. Drain on paper towels.

Buffalo Fried
If preparing buffalo fried chicken, toss the cooked chicken in buffalo sauce after frying.

Toast the burger buns lightly on the grill or in a toaster.

Spread a layer of pickle aioli on the bottom half of each bun.
