Calamari Preparation

    Mix Dry Ingredients

    In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well to combine.

    Prepare Wet Mixture

    In another bowl, whisk together the egg and buttermilk until well combined.

    Coat Calamari Rings

    Dip each calamari ring into the wet mixture, allowing excess liquid to drip off. Then, coat it in the dry mixture, shaking off any excess flour.

    Heat Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry Calamari

    Fry the coated calamari rings in batches for about 2-3 minutes or until they are golden brown and crispy. Do not overcrowd the pan.

    Drain Calamari

    Remove the fried calamari from the oil using a slotted spoon and drain on paper towels. Keep warm while frying the remaining batches.

Marinara Sauce Preparation

    Sauté Garlic

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

    Combine Ingredients

    Add the canned crushed tomatoes to the saucepan, along with the dried oregano, salt, black pepper, and sugar. Stir to combine.

    Simmer Sauce

    Let the sauce simmer for about 15 minutes, stirring occasionally. Add the chopped fresh basil just before serving.
