Cajun Ribeye

Garlic Mashed Potatoes

Method

Cajun Ribeye

  1. 1

    Prepare the Ribeye

Remove the ribeye steak from the refrigerator and let it sit at room temperature for about 30 minutes. This helps to ensure even cooking.

  2. 2

    Rub with Cajun Spice

Generously rub the Cajun spice blend all over the ribeye steak, ensuring it is evenly coated.

  3. 3

    Sear the Steak

In a cast-iron skillet, heat the olive oil over medium-high heat until it's shimmering. Carefully place the ribeye in the skillet and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

  4. 4

    Add Cajun Butter

During the last minute of cooking, add the Cajun butter to the skillet. Baste the steak with the melted butter using a spoon to enhance flavor.

  5. 5

    Rest the Steak

Remove the ribeye from the skillet and let it rest on a cutting board for about 5 minutes before slicing.

Garlic Mashed Potatoes

  1. 6

    Prepare the Potatoes

Peel the russet potatoes and cut them into quarters. Place them in a large pot of salted water.

  2. 7

    Cook the Potatoes

Bring the pot to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.

  3. 8

    Sauté Garlic

While the potatoes cook, melt 2 tablespoons of butter in a small skillet over medium heat. Add minced garlic and sauté until fragrant, about 1-2 minutes.

  4. 9

    Mash the Potatoes

Drain the cooked potatoes and return them to the pot. Add the sautéed garlic, remaining butter, and milk. Mash until creamy and season with salt and pepper to taste.

Seasonal Side

  1. 10

    Prepare the Vegetables

Wash and trim the seasonal vegetables. If using asparagus, snap off the woody ends.

  2. 11

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add the vegetables and sauté for about 5-7 minutes or until tender. Season with salt and pepper to taste.
