    Prepare the Potatoes

    Wash and scrub the Russet potatoes thoroughly under cold water. Cut each potato into thin strips (about 1/4 inch thick) to form fries.

    Soak the Fries

    Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This will help remove excess starch and make the fries crispier.

Cooking

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C) over medium heat.

    Dry the Fries

    After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

    Fry the Fries

    Carefully add the fries to the hot oil in batches, making sure not to overcrowd the pot. Fry them for about 4-6 minutes or until golden brown and crispy.

    Drain and Season

    Remove the fries from the oil with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt, black pepper, paprika, garlic powder, and dried oregano.

Serving

    Transfer the fries to a serving basket or plate. If desired, top with grated Parmesan cheese and chopped fresh parsley for added flavor.
