1. Prepare the Potatoes

Wash the Russet potatoes thoroughly and slice them into thin rounds, about 1/8 inch thick. Use a mandoline for consistent thickness.

2. Soak the Potatoes

Place the potato slices in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

3. Dry the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

4. Heat the Oil

In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

5. Fry the Chips

Carefully add a handful of potato slices to the hot oil, being careful not to overcrowd the pot. Fry until the chips are golden brown and crispy, about 3-4 minutes.

6. Drain and Season

Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain. While still hot, sprinkle with sea salt, paprika, garlic powder, onion powder, and black pepper to taste.

7. Repeat

Repeat the frying process with the remaining potato slices.

8. Serve
