Method

Preparation

  1. 1

    Chop the Vegetables

Dice the onion and garlic cloves. Roughly chop the ripe tomatoes.

  2. 2

    Prepare the Fresh Basil

Wash and pat dry the fresh basil leaves, then set aside.

Cooking

  1. 3

    Sauté the Onion and Garlic

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for another minute until fragrant.

  2. 4

    Cook the Tomatoes

Add the chopped tomatoes to the pot and stir well. Cook for about 10 minutes until the tomatoes begin to break down.

  3. 5

    Add Broth and Seasoning

Pour in the vegetable broth, and add salt, black pepper, dried basil, and sugar. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.

Blending and Finishing

  1. 6

    Blend the Soup

Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer it in batches to a regular blender.

  2. 7

    Add Cream and Fresh Basil

Stir in the heavy cream and fresh basil leaves. Simmer for an additional 5 minutes to heat through.

Serving

  1. 8

    Serve the Soup

Ladle the soup into bowls and garnish with additional fresh basil if desired. Enjoy your delicious tomato basil soup!
