Crust Preparation

Prepare the Crust

Preheat the oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs and sugar. Stir in the melted butter until the mixture resembles wet sand.

Form the Crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 8-10 minutes, or until lightly golden. Remove and let cool.

Filling Preparation

Prepare the Filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add in the sugar and continue to beat until well combined.

Add Sour Cream and Vanilla

Add the sour cream and vanilla extract to the mixture and mix until smooth.

Incorporate the Eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

Pour into Crust

Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake

Bake in the preheated oven for 50-60 minutes, or until the center is set and only slightly jiggles when shaken. Turn off the oven and leave the cheesecake inside for 1 hour.

Cool and Chill

Remove the cheesecake from the oven and let it cool at room temperature for 30 minutes. Then refrigerate for at least 4 hours or overnight.

Topping Preparation

Prepare the Strawberries

In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Toss gently to coat. Let sit for about 15 minutes to allow the strawberries to release their juices.

Top the Cheesecake

Once the cheesecake is chilled, top with the strawberry mixture before serving.
