Method

Steak Preparation

  1. 1

    Season the Steak

Rub the ribeye steaks with olive oil, garlic powder, salt, and black pepper. Let them sit at room temperature for at least 30 minutes.

  2. 2

    Cook the Steak

Heat a grill or a skillet over high heat. Once hot, add the steaks and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. During the last minute of cooking, add fresh thyme to the pan for flavor.

  3. 3

    Rest the Steak

Remove the steaks from heat and let them rest for 5-10 minutes before slicing.

Frites Preparation

  1. 4

    Prepare the Potatoes

Peel and cut the russet potatoes into thin strips (about 1/4 inch thick). Rinse them in cold water to remove excess starch.

  2. 5

    Soak the Potatoes

Soak the cut potatoes in cold water for at least 30 minutes to help them become crispy when fried.

  3. 6

    Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

  4. 7

    Fry the Potatoes

Drain and pat the potatoes dry. Carefully add the potatoes to the hot oil in batches, frying for about 5-7 minutes until golden brown and crispy. Remove from oil and drain on paper towels.

  5. 8

    Season the Frites

While still hot, sprinkle the fried potatoes with salt to taste.
