Method

Pasta Preparation

  1. 1

    Cook the Pasta

In a large pot of boiling salted water, cook the elbow macaroni according to package directions until al dente. Drain and set aside.

Cheese Sauce

  1. 2

    Make the Cheese Sauce

In a medium saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until bubbly.

  2. 3

    Add Milk

Slowly whisk in the milk, continuing to whisk until smooth. Cook for about 5-7 minutes, or until the mixture thickens.

  3. 4

    Add Cheese and Seasoning

Remove from heat and stir in the shredded white cheddar cheese, salt, and black pepper until the cheese is fully melted and the sauce is creamy.

Pesto Preparation

  1. 5

    Prepare the Pesto

In a food processor, combine the fresh basil leaves, pine nuts, minced garlic, grated Parmesan cheese, olive oil, and salt. Blend until smooth, scraping down the sides as needed.

Combine and Serve

  1. 6

Combine Pasta with Sauce and Pesto

In a large mixing bowl, combine the cooked pasta with the cheese sauce. Stir in the prepared pesto until well combined.

  2. 7

    Serve

Serve hot, garnished with extra Parmesan cheese or fresh basil if desired.
