Method

Preparation

  1. 1

    Wash and Prepare Apples

Thoroughly wash the apples under cold water to remove any dirt or pesticides. Core and chop them into quarters, leaving the skin on for added flavor and nutrients.

  2. 2

    Combine Ingredients

In a large pot, add the chopped apples, water, granulated sugar, cinnamon sticks, whole cloves, nutmeg, and lemon juice. Stir well to combine all the ingredients.

Cooking

  1. 3

    Simmer the Mixture

Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low and cover. Let it simmer for 1 hour, stirring occasionally.

  2. 4

    Mash and Strain

After simmering, use a potato masher to mash the apples and release their juices. Once mashed, strain the mixture through a fine mesh strainer or cheesecloth into a large bowl, pressing down to extract as much liquid as possible.

Finishing Touches

  1. 5

    Add Optional Ingredients

If desired, add the star anise and vanilla extract to the strained cider for extra flavor. Stir well.

  2. 6

    Cool and Serve

Let the cider cool to room temperature before transferring it to bottles or jars. Serve chilled or warmed, as preferred.
