Prepare the Patties
Divide the ground beef into four equal portions (approximately 0.56 lbs each) and shape them loosely into balls. Do not overwork the meat.

Heat the Grill or Skillet
Preheat a large skillet or grill over medium-high heat. Ensure it is well-oiled to prevent sticking.

Smash the Patties
Once the skillet is hot, place the beef balls onto the surface. Using a heavy spatula or burger press, smash each ball down flat (about 1/2 inch thick). Season with salt and black pepper.

Cook the Patties
Cook for about 3-4 minutes until a nice crust forms on the bottom. Flip the patties and immediately place a slice of American cheese on each patty. Cook for an additional 2-3 minutes until the cheese melts and the burgers are cooked to your desired doneness.

Prepare the Buns
While the patties are cooking, slice the brioche buns in half and toast them on the grill or in a toaster until golden brown.

Assemble the Burgers
Spread house burger sauce on the bottom half of each toasted brioche bun. Layer with shredded lettuce, sliced tomato, onion, and pickles. Place the cooked patties with melted cheese on top, then close the burgers with the top half of the buns.

Serve the burgers immediately with your choice of sides.
