Prepare the Beer Cheese Sauce
In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1 minute until bubbly. Slowly add the beer and milk, whisking continuously until smooth. Stir in the white cheddar cheese, garlic powder, onion powder, salt, and black pepper. Continue to stir until the cheese is melted and the sauce is smooth. Remove from heat and set aside.

Cook the Fries
In a deep fryer or a large pot, heat oil to 350°F (175°C). Fry the hand-cut fries in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Season with salt to taste.

Prepare the Protein
Cook your chosen protein (grilled chicken, pulled pork, or tofu) according to your preferred method. Make sure it is seasoned well with salt and pepper.

Toast the Sourdough
Toast the sourdough bread slices until golden brown.

Assemble the Foundry Horseshoe
On each slice of toasted sourdough, layer the prepared protein, then generously drizzle the white cheddar beer cheese sauce over the top. Serve alongside the hand-cut fries.
