Prepare the Chicken Wings
Preheat your smoker to 225°F (107°C). Pat the chicken wings dry with paper towels and place them in a large bowl. Add olive oil, salt, black pepper, garlic powder, and paprika. Toss to coat evenly.

Smoke the Wings
Place the seasoned wings in the smoker and smoke for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Fry the Wings
Once smoked, heat oil in a deep fryer or a large pot to 350°F (175°C). Fry the wings in batches for about 5-6 minutes, or until they are golden brown and crispy.

Toss in Sauce
Remove the wings from the oil and drain on paper towels. Toss the hot wings in your choice of sauce until evenly coated.

Make the Buttermilk Ranch
In a bowl, whisk together buttermilk, mayonnaise, dried dill weed, garlic powder, salt, and pepper. Adjust seasoning as needed.
