Prepare the Fries
Wash and peel the russet potatoes. Cut them into thick strips to form fries. Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and pat dry the soaked fries, then deep-fry in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.

Make the White Cheddar Beer Cheese
In a saucepan, melt butter over medium heat. Add flour and whisk for 1-2 minutes until golden. Gradually add beer, whisking until smooth. Stir in garlic powder, onion powder, and black pepper. Reduce heat to low and add shredded white cheddar cheese, stirring until melted and creamy.

Assemble the Dish
Place the crispy fries on a serving platter. Drizzle the white cheddar beer cheese over the fries. Top generously with crumbled hickory bacon and sliced scallions. Drizzle with buttermilk ranch dressing before serving.
