Prepare the Fries
Preheat the oven to 425°F (220°C). Toss the hand-cut fries in olive oil, salt, and pepper. Spread evenly on a baking sheet and bake for 25-30 minutes until crispy and golden brown.

Cook the Onions
In a skillet over medium heat, add 1 tablespoon of olive oil. Slice the onion and sauté for about 5 minutes until softened. Add the beer and cook for an additional 5-7 minutes until the liquid reduces and the onion is caramelized.

Combine and Melt the Cheese
Reduce heat and layer the American cheese over the cooked beef. Cover the skillet and allow the cheese to melt for about 2-3 minutes.

Assemble the Dish
On a serving plate, place a generous portion of the hand-cut fries. Top with the cheesy beef mixture and caramelized beer onions. Drizzle with chipotle aioli before serving.
