    Prepare the Potatoes

    Wash and thinly slice the potatoes using a mandoline or a sharp knife. Aim for uniform thickness for even cooking.

    Soak the Potatoes

    Soak the sliced potatoes in cold water for at least 30 minutes to remove excess starch. Drain and pat them dry with a kitchen towel.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

    Fry the Chips

    Carefully add a handful of potato slices to the hot oil. Fry in batches for about 3-4 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

    Season the Chips

    While the chips are still hot, sprinkle with sea salt for sea salt chips or barbecue seasoning for BBQ chips. Toss gently to coat.

    Cool and Store

    Let the chips cool completely before serving. Store in an airtight container for up to a week.
