Prepare the Bacon
In a large skillet, cook the alder smoked bacon over medium heat until crispy. Remove and place on paper towels to drain excess fat. Once cooled, crumble into small pieces.

Add Peas and Deglaze
Add sweet peas to the skillet and cook for another 2 minutes. Pour in white wine to deglaze the pan, scraping any browned bits off the bottom. Allow to simmer for about 5 minutes.

Make the Sauce
Reduce heat to low and stir in heavy cream. Allow the sauce to simmer for an additional 5 minutes until it thickens slightly. Season with salt and black pepper to taste.

Combine and Serve
Gently fold the crispy bacon and seared scallops into the creamy sauce. Serve hot, garnished with fresh parsley.
