    Prepare the Bacon

    In a large skillet, cook the alder smoked bacon over medium heat until crispy. Remove and place on paper towels to drain excess fat. Once cooled, crumble into small pieces.

    Sauté the Vegetables

    In the same skillet, add olive oil and sauté minced garlic until fragrant. Add cremini mushrooms, wild mushrooms, and sundried tomatoes. Cook until mushrooms are soft, about 5-7 minutes.

    Add Peas and Deglaze

    Add sweet peas to the skillet and cook for another 2 minutes. Pour in white wine to deglaze the pan, scraping any browned bits off the bottom. Allow to simmer for about 5 minutes.

    Make the Sauce

    Reduce heat to low and stir in heavy cream. Allow the sauce to simmer for an additional 5 minutes until it thickens slightly. Season with salt and black pepper to taste.

    Cook the Scallops

    In a separate pan, heat a little olive oil over medium-high heat. Season scallops with salt and pepper. Sear scallops for 2-3 minutes on each side until golden and cooked through.

    Combine and Serve

    Gently fold the crispy bacon and seared scallops into the creamy sauce. Serve hot, garnished with fresh parsley.
