Prepare the Ingredients
Clean and chop the mushrooms, bell peppers, and jalapenos. Mince the roasted garlic and slice the red chilies.

Sear the Beef
In a large skillet, heat the olive oil over medium-high heat. Season the beef tenderloin tips with salt and black pepper. Add the beef to the skillet and sear for about 3-4 minutes until browned. Remove the beef from the skillet and set aside.

Cook the Vegetables
In the same skillet, add the chopped bell peppers, jalapenos, mushrooms, and red chilies. Sauté for about 5 minutes until the vegetables are tender. Add the minced roasted garlic and cook for an additional minute.

Combine and Simmer
Return the seared beef to the skillet. Add the cherry tomatoes, spinach, demi-glace, and heavy cream. Stir well to combine and simmer for 5-7 minutes until the sauce thickens slightly. Adjust seasoning with salt and pepper if necessary.

Serve hot, garnished with fresh herbs if desired, over rice or pasta.
