Prepare the Toppings
Dice the Roma tomatoes and place them in a mixing bowl. Chop the pickled fennel, roasted red pepper, and fresh basil, and add them to the bowl. Drizzle with olive oil and season with salt and black pepper. Mix well and set aside.

Prepare the Bread
Preheat your oven to 400°F (200°C). Slice the focaccia bread into 1-inch thick pieces. Place them on a baking sheet and brush lightly with olive oil.

Toast the Focaccia
Bake the sliced focaccia in the preheated oven for about 8-10 minutes, or until golden and crispy.

Assemble the Bruschetta
Once the focaccia is toasted, remove it from the oven. Spoon a generous amount of the tomato topping mixture onto each slice of focaccia.

Serve immediately while the bread is warm, garnished with extra basil if desired.
