Risotto Preparation

Cook the Chorizo

In a large saucepan, heat olive oil over medium heat. Add diced chorizo and cook until browned. Remove and set aside.

Sauté Aromatics

In the same pan, add chopped onion and minced garlic. Sauté until onion is translucent.

Add Rice

Add Arborio rice to the pan, stirring for 2-3 minutes until the rice is lightly toasted.

Add Broth Gradually

Pour in the broth, one ladle at a time, stirring constantly until absorbed before adding more.

Incorporate Peas and Sundried Tomatoes

After about 15 minutes, stir in sweet peas, sundried tomatoes, and cooked chorizo. Cook until the rice is al dente and creamy.

Finish Risotto

Stir in grated Parmesan cheese and season with salt and black pepper to taste. Remove from heat and keep warm.

Saffron Aioli Preparation

Combine Ingredients

In a small bowl, mix mayonnaise, saffron threads (soaked in a little warm water), lemon juice, and minced garlic until well combined.

Season with salt to taste and set aside.

Scallops Preparation

Prepare Scallops

Pat the sea scallops dry with paper towels. Season with salt and black pepper.

Sear Scallops

In a skillet, heat olive oil over high heat. Add scallops and sear for 2-3 minutes on each side until golden brown and cooked through.

Assembly

Plating the Dish

On a plate, serve a generous portion of risotto, top with seared scallops, and drizzle with saffron aioli. Garnish with grated Asiago cheese and chopped parsley.
