Method

Preparing the Mussels

    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

    Cook the Bacon

    In a large pot, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the pot.

    Sauté the Tomatoes

    Add olive oil to the pot with the bacon drippings. Sauté the cherry tomatoes until softened, about 2-3 minutes.

    Add Mussels and Wine

    Add the cleaned mussels and white wine to the pot. Cover and cook for about 5-7 minutes, until the mussels open. Stir in fresh herbs and crumbled bacon before serving.

Saffron Curry Sauce

    Prepare the Sauce

    In a saucepan, combine coconut milk, saffron threads, curry powder, minced garlic, ginger, and lime juice. Simmer on low heat for 10-15 minutes, stirring occasionally.

Italian Sausage Aleppo Pepper Cream Sauce

    Cook the Sausage

    In a skillet, cook the Italian sausage over medium heat until browned. Add chopped onion and minced garlic, cooking until the onion is translucent.

    Add Cream and Season

    Stir in the heavy cream and Aleppo pepper. Simmer for about 5-7 minutes until the sauce thickens slightly.

Serving

    Plate the Dish

    Serve the mussels hot with the saffron curry sauce or Italian sausage Aleppo pepper cream sauce. Accompany with slices of French bread for dipping.
