Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper. Heat a skillet over medium-high heat and add a little oil. Sear the chicken breasts for about 5 minutes on each side until golden brown. Transfer to a baking dish.
Add the Toppings
Lay slices of Brie cheese on top of each chicken breast. Then add the cooked bacon pieces over the Brie. Spoon the red onion marmalade generously over the top.
Bake the Chicken
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the Brie is melted and bubbly.
Assemble the Sandwich
Once the chicken is done, remove it from the oven. Toast the slices of French White or Sunflower Bread. Layer the sautéed spinach on the bread, then place the chicken with Brie on top, and close the sandwich.
Serve
Cut the sandwich in half and serve warm with any remaining red onion marmalade on the side.
