    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Caramelize the Onion

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced onion and cook, stirring occasionally, until golden brown and caramelized, about 15-20 minutes.

    Sauté the Mushrooms

    Add the remaining tablespoon of olive oil to the skillet. Add the foraged mushrooms and sauté until they are tender and browned, about 5-7 minutes. Stir in the garlic confit and sliced red chili, and cook for an additional 2-3 minutes.

    Combine Ingredients

    Add the cooked linguine to the skillet with the mushroom mixture. Toss to combine, adding reserved pasta water as needed to create a silky sauce. Stir in the basil pesto and chopped fresh herbs.

    Season and Serve

    Season with salt and black pepper to taste. Serve immediately, garnished with additional fresh herbs if desired.
