In a large pot, heat 4 liters of filtered water to 70°C (158°F). Add the Pilsner and Carapils malts, stirring to combine. Maintain the temperature for 60 minutes to allow the grains to mash.

Mashing

Once mashing is complete, separate the liquid (wort) from the grains. Sparge (rinse) the grains with an additional liter of hot water to collect the wort.

Lautering

Bring the wort to a boil. Add Hallertau hops and boil for 60 minutes. Add Saaz hops for the last 10 minutes of the boil.

Boiling

After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches 20°C (68°F).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the Pilsner yeast and seal the vessel with an airlock. Allow it to ferment at around 10-12°C (50-54°F) for 2 weeks.

Fermentation

After fermentation, siphon the beer into sanitized bottles, leaving some headspace. Cap the bottles and allow them to carbonate for an additional 1-2 weeks at room temperature.
