Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips (about 1/8 inch thick) to create shoestring fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will create a crispier fry.

Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C). You can use a thermometer to check the temperature.

Dry the Fries
After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

Carefully add a handful of the dried fries to the hot oil, being cautious not to overcrowd the pot. Fry for about 3-4 minutes or until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the fries from the oil and drain them on paper towels. Immediately season with salt, pepper, and garlic powder to taste.
