Preparing the French Toast
Make the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
Coat the Bread
Dip each slice of bread into the egg mixture, ensuring both sides are well coated.
Crust with Frosted Flakes
Crush the Frosted Flakes into smaller pieces and place them in a shallow dish. Press each coated slice of bread into the crushed Frosted Flakes until fully coated.
Cooking the French Toast
Heat the Pan
Heat a large skillet or griddle over medium heat and add a little butter or oil.
Cook the French Toast
Place the coated bread slices in the skillet and cook for 3-4 minutes on each side or until golden brown and crispy.
Making the Apricot Topping
Prepare the Apricots
In a small saucepan, combine chopped dried apricots, honey, and water. Cook over medium heat until the apricots are softened and the mixture is slightly syrupy.
Serving
Plate and Serve
