Prepare the Batter
In a large bowl, mix the flour, cornmeal, baking powder, salt, and black pepper. In another bowl, whisk together the egg and milk. Combine the wet ingredients with the dry ingredients until just mixed.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Fish
Dip each fish fillet into the batter, allowing excess to drip off, then carefully place in the hot oil.

Fry the Fish
Fry the fish fillets for 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
On each burger bun, place a piece of fried fish, followed by slices of tomato, pickles, onion rings, and lettuce if desired. Top with the other half of the bun.
