Prepare the Dough
In a large bowl, mix the flour, remaining sugar, and salt. Make a well in the center and add the yeast mixture, eggs, and melted butter. Mix until a soft dough forms.

Knead and Rise
On a floured surface, knead the dough for about 5 minutes until smooth. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1-2 hours until doubled in size.

Shape the Beignets
Once the dough has risen, roll it out on a floured surface to about 1/4 inch thick. Cut into squares or rectangles.

Fry the Beignets
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the beignets in batches until golden brown, about 2-3 minutes on each side. Remove and drain on paper towels.

Dust the warm beignets with powdered sugar before serving. Enjoy!
