Prepare the Lobster

Preheat the grill to medium-high heat. Brush the lobster tails with olive oil and season with salt and pepper. Grill the lobster for about 6-8 minutes, turning halfway through, until the meat is opaque and cooked through. Remove from grill and let cool slightly before slicing.

Prepare the Avocado Purée

In a blender, combine the avocado flesh, lime juice, salt, and a little water for smoothness. Blend until creamy and set aside.

Prepare the Tortillas

Warm the corn tortillas on the grill for about 1-2 minutes on each side until slightly charred and pliable.

Assemble the Tacos

On each tortilla, add a portion of smoked corn, diced heirloom tomatoes, sliced grilled lobster, a dollop of avocado purée, and a spoonful of sour cream. Garnish with micro cilantro.

Serve immediately with lime wedges on the side.
