Prepare the Cocktail Shaker

Gather all the ingredients: amaretto, fresh lemon juice, simple syrup, egg white, and bitters. Ensure your cocktail shaker is clean and ready for use.

Dry Shake

Add the egg white to the cocktail shaker first (this helps to aerate it). Then add the amaretto, fresh lemon juice, and simple syrup. Seal the shaker and shake vigorously for about 15 seconds without ice. This is known as a dry shake and helps to froth the egg white.

Shake with Ice

After the dry shake, add ice to the shaker. Seal it again and shake vigorously for another 15-20 seconds to chill the mixture.

Strain and Serve

Using a fine mesh strainer, strain the cocktail into a chilled coupe or rocks glass. This ensures a smooth texture without any ice shards.

Add Bitters

Gently add 2 dashes of Angostura bitters on top of the drink for added flavor and aroma.
