Prepare the Ingredients
Wash and core the apples. Cut them into quarters without peeling. Grate the ginger and set aside.

Combine Ingredients in a Pot
In a large pot, add the quartered apples, water, lemon juice, grated ginger, brown sugar, honey, cinnamon stick, and cloves.

Simmer the Mixture
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and cover the pot. Allow to simmer for 30 minutes.

Mash the Apples
After 30 minutes, remove the pot from heat. Using a potato masher, mash the apples to release their juices.

Strain the Cider
Using a fine mesh strainer or cheesecloth, strain the mixture into a large bowl or pitcher, pressing down on the solids to extract as much liquid as possible.
