Place the brisket on the grill or smoker and cook for about 1.5 hours per pound, or until it reaches an internal temperature of 195°F (90°C). Wrap it in foil and let it rest for at least 30 minutes before slicing.

Cook the Ribs

Place the pork ribs on the grill or smoker, bone side down, and cook for about 4-5 hours, basting with Kansas City BBQ sauce during the last hour of cooking.

Cook the Chicken

Season the chicken thighs with any leftover rub and grill for about 30-35 minutes until they reach an internal temperature of 165°F (74°C), turning occasionally.

While the meats are cooking, prepare the buns and coleslaw. Toast the buns on the grill for added flavor.
