Prepare the Potatoes

In a skillet, melt 1 tablespoon of butter over medium heat. Add the hand-cut potatoes and sauté until golden brown and tender, about 10-12 minutes. Season with salt and pepper. Set aside.

Cook the Bacon and Ham

In the same skillet, add the chopped bacon and cook until crispy. Add the diced ham and sauté for an additional 2-3 minutes until heated through. Remove from the skillet and set aside.

Beat the Eggs

In a bowl, whisk together the eggs, salt, and black pepper until well combined.

Cook the Omelet

In the skillet, add the remaining tablespoon of butter over medium heat. Pour in the egg mixture and let it cook undisturbed until the edges begin to set, about 2-3 minutes.

Add Fillings

Once the edges are set, add the sautéed potatoes, bacon, ham, and shredded cheddar cheese (and optional veggies if using) to one half of the omelet. Allow it to cook for another minute until the cheese melts.

Fold and Serve

Gently fold the omelet in half over the fillings and slide it onto a plate. Serve warm.
