Prepare the Ingredients

Start by preparing all the ingredients. Dice the brisket and sausage, chop the peppers, onions, zucchini, and cube the potatoes.

Cook the Potatoes

In a large skillet over medium heat, add a splash of oil and cook the cubed potatoes until golden and tender, about 10-15 minutes. Set aside.

Cook the Meats

In the same skillet, add the brisket and andouille sausage. Cook until browned and heated through, about 5-7 minutes.

Add Vegetables

Add the chopped onions, peppers, and zucchini to the skillet. Sauté until softened, about 5-7 minutes.

In a separate pan, fry the eggs to your desired doneness.

Make the Hollandaise Sauce

In a double boiler, whisk together egg yolks, lemon juice, and salt. Gradually add melted butter while whisking until the sauce thickens. Add cayenne pepper to taste.

In a small bowl, combine barbecue sauce, honey, and apple cider vinegar. Mix well.
