Prepare Pork Belly

Cook the Pork Belly

Season the pork belly with smoked paprika, brown sugar, salt, and black pepper. Place in a smoker or an oven at 225°F (107°C) for 3-4 hours until tender. Allow to rest before slicing.

Make Johnny Waffles

Mix Ingredients

In a bowl, combine cornmeal, flour, baking powder, and sugar. In another bowl, whisk together milk, egg, and melted butter. Combine wet and dry ingredients until just mixed.

Cook Waffles

Preheat a waffle iron and lightly grease it. Pour batter into the waffle iron and cook according to the manufacturer's instructions until golden brown.

Fry Leeks

Prepare Leeks

Dredge sliced leeks in flour. Heat oil in a deep pan and fry the leeks until golden and crispy. Drain on paper towels.

Assemble the Dish

Plate the Waffles

Place a waffle on a plate, top with a slice of pork belly, and garnish with fried leeks, fennel fronds, and drizzle with peach glaze and honey. Optionally, add a fried egg on top.
